Aftermanytests,wefoundouttheperfectflour-to-waterratiotocreateadoughthatiselasticandnottoosoft.Soyouwillbeabletoworkinmorelayersandcreateabettertexture.  Mypreviousscallionpancakeusedchickenfat.Itwassuperdeliciousbutitdidrequireanextragroceryrun.Plus,I’vereceivedmanyrequestsforavegan/vegetarianversion.Usingthisrecipe,youcansimplyuseregularvegetableoilwithmoregreenoniontocreateaverydeliciousresult. Ingredients Allyouneedaresomebasicpantryingredientstomakegreatscallionpancakes–all-purposeflour,water,salt,vegetableoil,andgreenonion.  Tofurtherboostthetaste,youcouldaddsomegroundSichuanpeppercornstothefilling,butit’stotallyOKtoskipthem. Extragreenonion Howyoucutthegreenonioncangreatlyaffecttheoutcomeofyourscallionpancakes.Insteadofthinlyslicingitintoroundshapes,Ipreferto: Halvethescallionlengthwise.Thinslicethemintoverysmallhalf-moonpieces. Part2–preparethefilling Thebestwaytomakethescallionpancakefillingistomakeanoilflourpaste(notsimplybrushingoilontothedough).Thiswayyoucanworkinlayerseasilywithoutpressingouttheoilasyourolloutthepancakes. Tomakethefilling,simplymixthedryingredientswiththeoiluntilitformsasmoothpaste. Part3–Formingthescallionpancakes Cutthedoughinto6piecesandworkonthepiecesoneatatime.Useyourhandstoshapethedoughintoarectangularshape.RollthedoughThedoughshouldformaverythinrectangle.AddtheflouroilpasteSpreadoutthepaste,leavingabout1”(2.5cm)onbothalongandashortendwithoutthefilling(yourtopandleft)Addthegreenonion,concentratingmostofittowardsalongandshortendwiththefillingGentlyrollupthedough,astightlyaspossiblePresstheairbubblesoutofthedoughstripFurtherrollupthelongdoughstripTucktheendonthebottomGentlypressthetallpancakeLetitrestwhileyouworkontherestofthepancakes PS.Iprefertoresttheformedpancakesforafewminutesbeforerollingthemout,tolettheglutenrelax,soyoucanrollthemouteasily. Part4–Rollandcookthepancakes Rolloutthepancakeswhenyou’rereadytocookHeatupapanwithalayerofoilonthebottom,addthepancake,andwigglethepancakeafewtimessoitwon’tstickLetthepancakecookcoveredfirstFlipthepancakeandcookcoveredagainThencookuncovered,untilbothsidesofthepancakearebrownedYoucanuseaspatulatopressthepancake,tohelpwithevenbrowning NOTE:  Youcaneitheruseacastironskilletoranonstickpan.Eitherwillwork.Ifyouuseacastironpan,youwillneedagenerousamountofoiltopreventthepancakesfromsticking.It’spossibletouselessoiltocookthepancakes.Butforthebestresult–goldenbrownsurfaceandextracrispytexture,youwillneedathinlayerofoiltocoverthebottomofthepan(notjustafewdrops).It’simportanttocookthepancakescoveredatfirst,tocookthroughtheinterior. Howtostorescallionpancakes Thebestthingaboutthesepancakesisthattheycanbestoredraworcooked. Ifyou’dliketogetthebestfreshresult,freezethescallionpancakesrawafteryourollthemout.Carefullystackthemwithapieceofparchmentpaperinbetween,thentransfereverythingtoalargeziplockbag.Pressoutasmuchairaspossibleandsealthebag.Freezethepancakesforupto3months. Tocookthefrozenpancakes,simplyletthemthawatroomtemperaturefor8minutesandcookthemusingthesamemethod. Ifyoucookallthepancakesandhaveleftovers(veryunlikely!!),youcanputtheminabagandstoretheminthefridgeforafewdays.Youcaneitherreheattheminthemicrowaveoronthestovetop.Note,ifyoureheatacookedpancake,itwillstillbequitecrispybutthetexturewillturnabitchewier.
