Whythisrecipe
IsharedarecipeafewyearsagoandsincethenI’vebeenperfectingthemethod.TodayIwanttoshareanupdatedversionthatusesevensimpleringredientstoyieldabetterresult.
Adoughthat’seasytoworkwithandtakesminimaltimetoprepareandrest. Delightfullycrispyandflakytexturewiththinlayersinside.Extragreenonionstuffing,givingitamorearomaticflavor.Skippedtheanimalfatwhilemaintainingtheflavorandthetextureofthedish.
Aftermanytests,wefoundouttheperfectflour-to-waterratiotocreateadoughthatiselasticandnottoosoft.Soyouwillbeabletoworkinmorelayersandcreateabettertexture.
Mypreviousscallionpancakeusedchickenfat.Itwassuperdeliciousbutitdidrequireanextragroceryrun.Plus,I’vereceivedmanyrequestsforavegan/vegetarianversion.Usingthisrecipe,youcansimplyuseregularvegetableoilwithmoregreenoniontocreateaverydeliciousresult.
Ingredients
Allyouneedaresomebasicpantryingredientstomakegreatscallionpancakes–all-purposeflour,water,salt,vegetableoil,andgreenonion.
Tofurtherboostthetaste,youcouldaddsomegroundSichuanpeppercornstothefilling,butit’stotallyOKtoskipthem.
Extragreenonion
Howyoucutthegreenonioncangreatlyaffecttheoutcomeofyourscallionpancakes.Insteadofthinlyslicingitintoroundshapes,Ipreferto:
Halvethescallionlengthwise.Thinslicethemintoverysmallhalf-moonpieces.
Thesmallerthegreenonionpieces,theeasieritwillbecomewhenyourollthemupinthedough.Thiscuttingmethodcreatesfewerairpocketsandallowsyoutostuffmoregreenonions.
Whatoiltouse
TraditionalChinesescallionpancakesuselard,whichmakesiteasytoworkinthelayers,anditaddsafragranttaste.Iusedtoenjoyusingchickenfat,becauseitcreatesanevenmorefragranttaste.
Overtheyears,I’vetriedtomakemydiethealthier,soI’vetriedusingplant-basedoilinsteadofanimalfat.Ifoundoutthatmanyoilswork.Myfavoriteispeanutoil,whichaddsanuttytastetothepancakes.Oliveoilandcoconutoilworkgreattoo,ifyouenjoytheiruniquetaste.Ifyouuseaneutralvegetableoil,youcanblendin1tablespoonsesameoiltoaddfragrance.
Cookingprocess
Cookingscallionpancakesmightlookdauntingataglance.Mydetailedstep-by-stepphotoswillhelpwalkyouthroughhowtopreparethedoughandshapethepancakeslikeapro.
Part1–Preparethedough
Ifyou’remakingabigbatchofscallionpancakes,youcanuseastandmixertomakethedough.ButIfounditeasyenoughtokneadthedoughbyhand.
Slowlyaddthehotwatertotheflourandmixitatthesametime.MixuntilthehotwaterisfullyabsorbedSlowlyaddthecoldwaterandcontinuemixingDoughflakesshouldformonceallthewaterisaddedStarttopresseverythingtogetherwithyourhandYoucanaddabitmorewaterifthere’stoomuchdryflourleft.Oryoucanslightlyaddabitmoreflourifthedoughisverysticky.Onceyou’vepressedallthedoughflakestogether,youshouldhavelittleornodryflourleft.Kneadabout5minsuntilatoughdoughisformed.Letrestfor20mins,thenkneadfor1minutetoformasmoothdough.
Part2–preparethefilling
Thebestwaytomakethescallionpancakefillingistomakeanoilflourpaste(notsimplybrushingoilontothedough).Thiswayyoucanworkinlayerseasilywithoutpressingouttheoilasyourolloutthepancakes.
Tomakethefilling,simplymixthedryingredientswiththeoiluntilitformsasmoothpaste.
Part3–Formingthescallionpancakes
Cutthedoughinto6piecesandworkonthepiecesoneatatime.Useyourhandstoshapethedoughintoarectangularshape.RollthedoughThedoughshouldformaverythinrectangle.AddtheflouroilpasteSpreadoutthepaste,leavingabout1”(2.5cm)onbothalongandashortendwithoutthefilling(yourtopandleft)Addthegreenonion,concentratingmostofittowardsalongandshortendwiththefillingGentlyrollupthedough,astightlyaspossiblePresstheairbubblesoutofthedoughstripFurtherrollupthelongdoughstripTucktheendonthebottomGentlypressthetallpancakeLetitrestwhileyouworkontherestofthepancakes
PS.Iprefertoresttheformedpancakesforafewminutesbeforerollingthemout,tolettheglutenrelax,soyoucanrollthemouteasily.

Part4–Rollandcookthepancakes
Rolloutthepancakeswhenyou’rereadytocookHeatupapanwithalayerofoilonthebottom,addthepancake,andwigglethepancakeafewtimessoitwon’tstickLetthepancakecookcoveredfirstFlipthepancakeandcookcoveredagainThencookuncovered,untilbothsidesofthepancakearebrownedYoucanuseaspatulatopressthepancake,tohelpwithevenbrowning
NOTE:
Youcaneitheruseacastironskilletoranonstickpan.Eitherwillwork.Ifyouuseacastironpan,youwillneedagenerousamountofoiltopreventthepancakesfromsticking.It’spossibletouselessoiltocookthepancakes.Butforthebestresult–goldenbrownsurfaceandextracrispytexture,youwillneedathinlayerofoiltocoverthebottomofthepan(notjustafewdrops).It’simportanttocookthepancakescoveredatfirst,tocookthroughtheinterior.
Howtostorescallionpancakes
Thebestthingaboutthesepancakesisthattheycanbestoredraworcooked.
Ifyou’dliketogetthebestfreshresult,freezethescallionpancakesrawafteryourollthemout.Carefullystackthemwithapieceofparchmentpaperinbetween,thentransfereverythingtoalargeziplockbag.Pressoutasmuchairaspossibleandsealthebag.Freezethepancakesforupto3months.
Tocookthefrozenpancakes,simplyletthemthawatroomtemperaturefor8minutesandcookthemusingthesamemethod.
Ifyoucookallthepancakesandhaveleftovers(veryunlikely!!),youcanputtheminabagandstoretheminthefridgeforafewdays.Youcaneitherreheattheminthemicrowaveoronthestovetop.Note,ifyoureheatacookedpancake,itwillstillbequitecrispybutthetexturewillturnabitchewier.
Afterthought
Chinesescallionpancakesdotakealittletimetoprepareandtherecipemightlookridiculouslylong.ButcomparedtootherclassicChinesedimsum,thisoneisactuallyeasiertomake.Ifyou’renewtodimsummakingbutlovebread,thisisagreatplacetostart.
ThesescallionpancakestastesogoodthatIwouldrefrainfrommakingthemoften,becauseI’lljusteatthemall(lol).Butthesearemyfavoriteandtheytastesomuchbetterwhenyoumakethemathome.Sinceyoucanmakethemaheadandfreezethemforlater,theyareperfectwhenfriendsorfamilycomeby.Ifyou’veneverhadthembefore,you’reabsolutelygoingtobeinloveatfirstbite!

Thisrecipeisamazing!flaky,deliciousandsimpletoo!Thedoughwassoeasytoworkwith.
Itrieditaftertryingandbeingdisappointedwithtwootherrecipes(oneofthemwastheseriouseatsrecipefromKenjiLopez).Themodificationtotheflour,andpaste(insteadofoil)reallymakesadifference.Theotherrecipesalsowantyoutorepeattheentireprocessofrollingflat–>oil–>rollinguptwotimesinsteadofonceandIthinkthatprobablystretchesoutandmushesallofthelayersintooneoilymassinsteadofincreasingthenumberofflakes.It’salsosomuchmorework.

Toansweryourquestion,noIhaven’tfoundagreatsolutionyet.Becausethewayyourollupthepancake,thecenterpartisthemostdenseandmoredifficulttocookthrough.Theonlysolutionmightbe–rollthepancakessuperthin,andthenfrytheminalotofoil.I’vesampledsupercrispypancakesinrestaurant(inChina).It’salmostlikeafrieddough.Sodeliciouswithoutthedoughinessinthemiddle.
Btw,Idon’trecommendtoturntheheattoolow.Ittendstodryoutthedoughifyoudon’tuseenoughoil.

Sorrytohearyoudidn’tlikethisrecipe!Forthisone,mygoalistocreatearesultthat’ssimilartotheAmericanChinesetakeoutpancake,whichismorechewyandcrispyontheoutside.Andthisdoughiseasierforbeginnertohandlebecauseit’squitefirm.
Ifyourgoalistomakeasuperflakyandsoftpancake(morelikethosewehaveinChina),youwillneedtousemorewaterinthedoughforasofterdough.Restthedoughlongerinbetweensoit’seasiertorollout.Plus,youneedtotrytonottearthedoughatallwhenrolling(askillusingtherightamountofpressure)sotheoilwillbefullywrappedintocreatetheflakycroissant-likelayers.Ifthedoughisrippedandtheoilseepingout,thenthelayerswillsticktogetherandlessflaky.
